- 1 piece Fennel Cut to 8 wedges
- 0.5 piece Red onion Sliced
- 100 g Cherry tomato Halved
- 25 g Bread crumbs
- 15 g Parmigiano Grated
- 40 g Taggiasca olives
- 2 tbsp Parsley Chopped
- 1 slug Olive oil
- 1 pinch Salt
- 1 pinch Black pepper
Actions
- Roast · 30 min · Until done and crispy
Pick the herbs of the fennel and set aside so they can be used to garnish the dish when plating. Cut all the veggies and add to a big oven proof tray. Add the bread crumbs, grated parmigiano, parsley, and olives. Drizzle with olive oil and season with salt and pepper. Mix well and roast in the oven at 200°C for 30 minutes.

Step 2
Transfer the roasted fennel and vegetables to a serving dish. Garnish with the reserved fennel fronds and serve warm.
