Spaghetti alla Carrettiera

Fast and satisfying weeknight dinner with simple ingredients but real and authentic flavours. I discovered this recipe late but has become one of our regulars.

  • Dry pasta 400 g
  • Garlic 10 g
  • Olive oil 145.7 g

  • Pecorino 46 g
  • Sourdough bread 110 g
  • Water 240 g

    • 2 slices Sourdough bread Crumbled
    • 3 tbsp Olive oil

    • Toast · 10 min · Until crispy and golden brown

    This is a great way to use stale bread. Process in a kitchen machine till breadcrumbs that are a bit bigger than regular storebought breadcrumbs to get that extra bite. Heat the EV olive oil in a pan on medium heat and toast the breadcrumbs till crispy and golden. About 10 minutes.

    • 400 g Dry pasta

    Cook the pasta according to the package description to al-dente. Drain and set aside. Do not throw away the pasta water.

    • 2 clove Garlic Minced
    • 8 tbsp Olive oil
    • 2 piece Chilli pepper Sliced
    • 2 sprigs Parsley Diced
    • 2 tbsp Pecorino Finely grated

    While the pasta is boiling, prepare the sauce. It is a cold sauce, so no cooking is required. Take a bowl big enough for the sauce ingredients and the pasta. Whisk all the sauce ingredients together until creamy. Start with all the ingredients except the pecorino. When it is emultified, add the pecorino a little at a time. If it is dry, add some pasta water, if it is liquid, some pecorino.

    Use output from steps 2 and 3

    • 1 handful Pecorino Finely grated
    • 2 ladle Water

    Add the cooked pasta straight out of the water into the bowl with the sauce. Toss everything together until pasta is covered with the sauce. Add the pecorino and some pasta water (only what is required) and keep tossing until everything is combined and creamy.

    • 2 drizzle Olive oil

    Add a portion of the flavoured pasta to a serving plate. Top with the toasted breadcrumbs and a drizzle of olive oil. And serve while hot and crispy.
